A hearty and wholesome one-pan dish made with egg whites, roasted sweet potato, and smoked paprika. Ideal for brunch, lunch, or a light dinner.
1 medium sweet potato, peeled and diced
1 red onion, sliced
1 red pepper, sliced
1 tsp smoked paprika
2 tbsp olive oil
40g cheddar or feta cheese (optional)
Salt and pepper to taste
1. Preheat the oven to 200°C (180°C fan) or gas mark 6.
2. Toss the sweet potato and red pepper with olive oil, paprika, salt, and pepper. Roast for 20–25 minutes until tender.
3. In an ovenproof frying pan, lightly sauté the red onion for 2–3 minutes. Add the roasted vegetables.
4. Pour in the egg whites, stir gently, and cook over medium heat for 3–4 minutes until the edges begin to set.
5. Sprinkle with cheese (if using) and transfer to the oven for 8–10 minutes until fully set and golden.
6. Slice and serve warm or at room temperature.
