Classic Pancakes with Lemon and Sugar

These classic pancakes made with egg whites make a delicious and light sweet treat on Pancake Day.

Ingredients for 4 servings:

100g plain flour

100g Two Chicks free range liquid egg whites

250ml milk or milk alternative

Cooking oil

Pinch of salt


To serve:

1 lemon, sliced into wedges

Sugar, honey or golden syrup



  1. Sift the flour and salt into a large jug or mixing bowl.

  2. Add the egg white and milk and whisk to make a smooth batter.

  3. Heat a non-stick pancake pan or medium-sized frying pan and add a few drops of cooking oil. Add a portion of the batter and cook over a medium heat until set. Flip the pancake over to cook the other side. Repeat until all the mixture has gone.

  4. Serve with lemon wedges and sprinkle caster sugar. Alternatively drizzle honey or agave syrup.
