Banana Pancakes with Chocolate Syrup

These fluffy banana and chocolate pancakes are sure to be a hit with grown-ups and kids alike!

Ingredients for 4 servings:


1 ½ cups flour

1 cup of milk

2 tbsp brown sugar

1 tbsp baking powder

½ tsp vanilla extract 

½ tsp cinnamon

1 tbsp baking powder

2 very ripe bananas mashed (about 1 cup)

1 medium egg

30g Two Chicks free range liquid egg whites

Cooking oil

Pinch of salt


To serve:

1 banana sliced, chocolate syrup, chocolate chips (optional)


Method:

  1. Whisk together the flour, brown sugar, baking powder, salt, and cinnamon in a large bowl.


  1. Whisk milk, egg, egg whites, oil, and vanilla in a large measuring bowl. Add wet ingredients to dry, add bananas, and stir until combined. 


  1. Heat a non-stick pancake pan or medium-sized frying pan and add a few drops of cooking oil. Add a portion of the batter and cook over a medium heat until set. Flip the pancake over to cook the other side. Repeat until all the mixture has gone.


  1. Serve in a stack and top with chocolate syrup, sliced banana and chocolate chips.
