Ingredients:
200g rolled oats
250ml Two Chicks egg whites
1 banana
1 tsp baking powder
1 tsp vanilla extract
100g blueberries (fresh or frozen)
Pinch of salt
Coconut oil or butter, for frying
Method:
Blend the oats, egg whites, banana, baking powder, vanilla, and salt until smooth.
Stir in the blueberries.
Heat a little coconut oil or butter in a non-stick frying pan over medium heat.
Pour small rounds of batter into the pan and cook for 1–2 minutes per side, until golden.
Serve warm with fresh berries and a drizzle of maple syrup.
