Baked Egg and Vegetable Casserole Recipe

This delicious, high protein casserole makes for a tasty breakfast, brunch or post gym snack – ideal for replenishing energy and hitting your protein goals.

Main ingredients

  • 175g crusty bread, cut into cubes (about 4 cups)
  • 450g pork sausage meat (sausages removed from skins)
  • 1 tbsp olive oil
  • 1 tsp dried rosemary or Italian seasoning (optional)
  • 100g brown onion (about half a large onion), chopped
  • 2 garlic cloves, minced
  • 275g mixed bell peppers, chopped
  • 100g mushrooms, sliced
  • 30g fresh spinach, roughly chopped (1 good handful)
  • 6 large whole eggs
  • 200ml Two Chicks Free Range Liquid Egg White (equivalent to 6 egg whites)
  • 160ml milk or reduced fat cream
  • 100g shredded cheddar cheese
  • ¼ tsp salt and a pinch of black pepper
  • Chopped parsley and/or sliced spring onions, to garnish

Method

  1. Prepare the dish: Grease a large oven dish (approx. 33×23 cm). Spread the bread cubes evenly on the bottom.

  2. Cook the filling: Heat the oil in a large frying pan. Add the sausage meat and seasoning (if using), and cook until browned. Add onions, garlic, peppers, mushrooms and spinach. Cook for 5–6 minutes until softened.

  3. Assemble: Scatter the cooked meat and vegetables over the bread.

  4. Mix the egg base: In a large bowl, whisk together the whole eggs, Two Chicks Free Range Liquid Egg White, milk, salt, pepper and cheese. Pour evenly over the bread and meat.

  5. Chill (optional but recommended): Cover and refrigerate 30 minutes–24 hours to let the bread soak up the egg mixture.

  6. Bake: Preheat oven to 190°C fan / 200°C / gas mark Bake uncovered for 40–45 minutes, until puffed, golden and set.

  7. Rest & serve: Let cool for 10 minutes, then slice and serve warm. Garnish with parsley or spring onions, if desired.

  • Small handful of mint, chopped
  • Salt and pepper to taste
